Watermelon and Arugula Salad

1/4 cup red onion, slivered or finely chopped

1 1/2 cups watermelon, cut into bite-sized pieces

1/2 cup feta cheese, crumbled

1/4 teaspoon fresh mint

5oz Arugula

½ cup Pomegranate vinaigrette

salt and pepper lightly

serve on remaining arugula leaves

Pomegranate Vinaigrette

1/4 cup pomegranate red wine vinegar

1 tablespoon Dijon mustard

3 tablespoon honey

salt and pepper

3/4 cup extra virgin olive oil



1. Mix watermelon, mint and red onion in large bowl

2. Add ½ portion of Arugula

3. Toss until everything is coated with vinaigrette. Let stand for at least 15 minutes, until ready to serve. Serve on lettuce leaves if you want.


1. Whisk together the pomegranate vinegar, mustard, honey and salt and pepper in a medium bowel. Slowly whisk in olive oil until emulsified.
