Blackbean Patties with Fresh Pineapple Salsa

Ingredients

1 (15-ounce) can black beans, rinsed and drained
1/3 cup Panko breadcrumbs
1/4 cup minced red onion
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon black pepper
¼ teaspoon salt
1 clove garlic, minced
1 ½ tablespoons cilantro, chopped
¼ cup Monterey Jack cheese
1 large egg
1 Tablespoon canola oil
Cooking spray

Fresh Pineapple salsa
2 cups plum tomatoes, seeded and diced
1 1/2 cups diced peeled ripe mango
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, minced

Directions

To prepare salsa, combine all ingredients in a medium bowl. Refrigerate until ready to serve.

To prepare patties, place beans in a large bowl; partially mash with a fork. Stir in Panko breadcrumbs and next 9 ingredients (Panko through egg). Divide bean mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.

Place patties in pan coated with oil and cooking spray; cook 5 minutes on each side or until thoroughly heated. Serve with pineapple salsa.

Yield: 4 servings (serving size: 1 burger)
