Caprese Flatbread Pizza with Balsamic Glaze


½ cup balsamic vinegar
2 pieces of flat bread
1 teaspoon of minced garlic {approximately 1 garlic clove}
1 teaspoon olive oil
3 oz. of fresh mozzarella cheese, sliced
4 plum tomatoes, sliced
¼ cup fresh Parmesan cheese, grated
3 T. of basil, roughly chopped


Add the balsamic vinegar to a small saucepan and simmer on low heat until reduced by half; it will become thicker, sweeter and more syrupy as it cooks.

Preheat oven to 350 degrees. Pre-bake the flatbread on a baking sheet 4-5 minutes.
Remove from oven. Spread flatbreads with olive oil and garlic.

Top each flatbread with mozzarella, tomatoes and Parmesan cheese.

Place flatbreads in oven and bake for about 5 minutes or until cheese is melted.

Top with basil and drizzle with balsamic reduction.

Yield: 2 servings 380 calories; 16 grams fat
