Ingredients
1 ½ tablespoons olive oil
2 tablespoons lemon juice
¼ teaspoon salt
½ teaspoon pepper
2 garlic cloves
1 pint cherry tomatoes, halved
1 ½ cups chopped peeled English cucumber
1/3 cup sweet onion, chopped
2 tablespoons fresh dill
4 ounces fresh mozzarella pearls
Directions
Combine first 5 ingredients in a large bowl, stirring with a whisk. Add tomatoes, cucumber, onions and dill. Gently stir in mozzarella pearls. Serve immediately, or cover and chill 1 hour.
