Chicken, Black Beans and Rice with Avocado Salsa


1 peeled avocado, diced
1 medium tomato, diced
1/2 cup thinly sliced green onions
1 tablespoon fresh lime juice
2 tablespoons cilantro, chopped

¼ cup water
3 tablespoons fresh lime juice
1 teaspoon ground cumin
1/4 teaspoon ground coriander
Dash red pepper
2(15-ounce) can black beans, rinsed and drained
1 cup shredded roasted skinless, boneless chicken breast
2 cups cooked rice


To prepare salsa, combine first 5 ingredients in a small bowl. Toss gently, and set aside.

In a medium saucepan, add water and next 5 ingredients. Simmer over medium heat until warmed through.

Divide rice between plates and top with black beans, chicken and avocado salsa.

YIELD: 4 servings About 350 calories, 10 grams fat
