1 bottle of La Choy Stir Fry Orange ginger sauce
1 can of Mandarin oranges sliced in water or natural juice
1 lb. boneless skinless chicken breast, thinly sliced (chicken tenders work well)
extra virgin olive oil
1 cup of sliced carrots
1 cup of broccoli florets
2 cups cooked brown rice or minute whole-grain brown rice
Brown the chicken with minced garlic and olive oil. Steam your broccoli and carrots. Mix chicken and vegetables in a skillet with chicken, sauce and sliced mandarin oranges, then let simmer till everything is warm. Cook the brown rice. Then serve with the chicken and vegetables on top. Pour extra sauce on top if desired.
