1 (8 ounce) package cream cheese, softened
1/2 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon distilled vinegar
4 large eggs
1 egg white
2 sticks butter, melted
2 cups sugar, divided (3/4 and 1/4)
1 bottle red food color (1 oz)
1/2 cup cocoa powder
Preheat oven to 350 . Spray a 13 x 9 inch baking pan with nonstick baking spray. In a small bowl mix together cream cheese,1/4 cup of sugar and egg white at medium speed until blended smoothly. Set aside.
In a medium bowl, whisk together cocoa and melted butter, making sure it is smooth.
In a large bowl, beat 1 and 3/4 cup sugar and 4 eggs at medium speed until fluffy. Reduce speed and beat in vanilla, food color, butter mixture and vinegar until combined. Gradually add flour 1/2 cup at a time. Pour batter into prepared pan. Dollop the cream cheese mixture on top of batter and gently swirl with a knife.
Bake 25 to 30 minutes. Cool completely before cutting and enjoying! Makes about 2 1/2 dozen.
