Thai Prawn Cakes on Lemongrass Skewers


1 lb raw shrimp 26/30 count peeled and deveined
2 green onions chopped
1 tsp fine dice lemon grass
1Tbsp chopped fresh cilantro
1 Tbsp fish sauce
1Tbsp lime juice
1 tsp sweet chili sauce
4 Tbsp bread crumbs


Place all ingredients in a food processer, pulse until medium chop. Next shape the prawn mixture into 2“ patties. Place the patties on a lined plate with plastic wrap and then wrap the prawn cake around the end of the lemongrass skewer; spray your hands with non-stick spray so the patties do not stick to your hands. Chill for thirty minutes. These skewers can be cooked on your grill, in a sauté’ pan, or in the oven for 2-3 minutes per side. Serve with your favorite sauce such as a sweet thai chili sauce.
