Chicken Pilau, Savory Saturday With Liza Park
A southern classic with a fancy name - chicken pilau, pronounced per-lou or per-low around these parts, is filling, delicious and perfect any time of the year!

Ingredients:
olive oil
1/2 cup chopped/dice bacon or ham
1 chopped medium onion
1 chopped bell pepper
2 cups long grain rice
2 cups chicken broth
1 can diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb diced, chunked or shredded cooked chicken
Instructions:
Heat about a tablespoon or two of olive oil in a large skillet. Add the bacon (or ham) and lightly brown. Then add the onion and bell pepper and cook until softened. Then put the rice in the pot and brown for about a minute. Now pour in the chicken broth, diced tomatoes, salt and pepper. Mix well, cover with a lid and cook on medium heat until the rice is fully cooked and fluffy. Then add in your cooked chicken. This chicken can be diced, chunked or shredded, and if you want to save some time, canned chicken worked well. Enjoy!
