Egg Foo Young With Ham, Savory Saturday With Liza Park
Egg Foo Young may sound exotic, but it's really quick, easy and light - a perfectly delicious dish as we prepare for the summertime!

Ingredients:
1/3 cup sliced onions
1/2 cup chopped green onions
1/2 cup sliced fresh mushrooms
1/2 bean sprouts (optional)
6 eggs
1 cup ham (or shrimp or chicken - whatever cooked meat you prefer)
1/2 teaspoon salt
1/2 teaspoon pepper
cooking spray
cooking oil
Directions:
Heat a pan with cooking spray or about a teaspoon of cooking oil. Then add in the onions, green onions and mushrooms (you can choose to also include bean sprouts or chives or other similar kinds of chopped vegetables you like). Stir fry for about a minute or until the vegetables are tender and limp. Set that over to the side. In a large bowl, mix together the eggs, ham (or cooked meat of your choice), cooked vegetables, salt and pepper. Then reheat the pan with cooking spray and/or some cooking oil, and when it's warmed up, add in the egg mixture and gently scramble - like scrambled eggs. Serve while still warm. This makes about 4 servings. Enjoy!
