Key Lime Pie, Savory Saturday With Liza Park
Celebrate the Sunshine State with Florida's state pie - the Key Lime Pie! Fruity, sweet and a touch tart - some say it's representative of the lively, colorful people of the state - and it's simply divine!

Ingredients:
3 egg yolks
1 can (14 oz) sweetened condensed milk (can use fat-free kind too)
3/4 cup lime juice
green food coloring
pie shell (I use store bought graham cracker shells)

Directions:
Put the egg yolks in a large bowl and use and electric mixer to get them thick and pale yellow. Add the condensed milk (you can use the fat-free kind if you're watching calories and it works out just as well) and use mixer again. Add the lime juice and mix... and then a couple of drops of green food coloring and do a final good mix. Pour the filling into the pie shell and bake at 350 degrees for about 10 to 14 minutes or until the middle of the pie filling is firm and set.

Take the pie out of the oven and let it cool off for about 15 minutes. Then chill the pie in the refrigerator for at least 2 hours or you can put it in the freezer for an hour if you need to speed things up some. Finally, you can top of the pie with some whip cream. I use the kind that comes out of the can because you can decorate with it well. Enjoy!
