2 cups cooked chicken, into large pieces
2 medium avocados, mashed
2T fresh squeezed lime juice
salt and pepper to taste
1/2 jalapeño pepper, small diced
1/4 c diced red onions
1/2 c chopped fresh cilantro
2 T mayo (optional)
Rough chop the chicken until you have 2 cups of chicken into large chunks. Mash the avocados, until a smooth but slightly chunky mix, mix with 1 T of the lime juice, and season avocado with salt and pepper to taste. Then chop the red onion and chopped the cilantro. Mix mayo, honey and remaining lime juice to make the dressing.
Put the chicken into a bowl large. Add the diced onions and dressing and toss until all the chicken is coated with dressing. Add the avocado mixture to the bowl and gently combine with the chicken. Then add the chopped cilantro, and jalapeño then gently mix into the salad, just until combined.
Serve chill for a while before serving. Serve with pita bread or sandwich bread, or inside crisp lettuce cups.
