Valdosta's Temple Israel is gearing up for its Kosher Corned Beef Sandwich Extravaganza.

More than 800 pounds of Hebrew National corned beef--shipped from New York-- is being sliced, portioned and wrapped in wax paper.

More than 4,000 sandwiches will be hand made by Sunday.

"How many people in Valdosta, in this area, would buy a corned beef on rye?," said Sidney Morris, who founded the event 11 years ago. "So we decided to do it. And the first year we sold 500, and thought we were just setting the world on fire."

"The thinner it is, generally the better it is," said Kim Perlman, a member of the congregation, as he sliced corned beef using a special machine that costs more than $5,000. "Corned beef is tough when it's too thick, and a lot of times you run into that. But we are cutting it very,very thin. And it's very, very good!"

The Kosher Corned Beef Sandwich Sale will be going on at Temple Israel, 511 Baytree Road, Sunday from 11 a.m. to 6 p.m. and Monday from 11 a.m. to 7 p.m.

For $10, you'll get 1/3 lb. of corned beef on rye, chips, a dill pickle, a drink and dessert.
