Celebrity Chef: Slim Salami

2 1/2 pounds ground venison or "lean" ground beef
1 tsp. liquid smoke
1/4 tsp of garlic powder
1 tbsp. peppercorns or 1/2 to 1 tsp. course ground pepper
2 1/2 tbs. Mortons Tender Quick
1 cup water

*Mix all ingredients well.
*Form into 2 or 3 rolls.
*Wrap tightly in plastic wrap then put in a gallon size freezer bag.
*Chill 24 hours.
*Remove from freezer bag, and remove plastic wrap.
*Place uncovered on a broiling rack and bake for 1 1/2 hours at 350 degrees.

Serve hot or cold. Great by itself, on crackers with cheese, or on a sandwich.
