Chef Ben's Maine Lobster cake

1 pound Maine lobster meat
2 eggs
1/2 tsp dijon mustard
3/4 cup mayonnaise
1/2 red pepper diced small
2 T chopped parsley
juice of 1/2 fresh lemon
1/2 small red onion diced small
3/4 cup bread crumb (panko or fresh works the best)


This recipe is very simple just mix all ingredients together but the bread crumbs. Just make sure the maine lobster meat is drained of most the liquid once it's thawed. It should also be noted that us Floridians may want to use spiny lobster, which is no problem, you'll just have to cook the lobster prior to adding it to the recipe. So after all ingredients have been mixed, add the bread crumbs. Season with salt and pepper and let stand 10 minutes to any hour. This gives the bread crumbs time to soak up all the moisture and keeps the "cake" from falling apart. From there you're ready to cook. Heat up a medium size saute, add 2 tablespoons of oil and add desired size cakes. Make sure the heat is no higher than medium and cook until both sides are golden brown. Remove from pan onto a paper towel covered plate (to soak up any excess oil from pan) Add your favorite sauce and enjoy!
