ALMOND BLONDIES

Ingredients

2 cups packed brown sugar
2/3 cup butter, cut up
2 eggs
2 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 ½ cups chopped almonds (Note: If using slivered almonds only use 1 cup)

Directions

Preheat oven to 350 degrees. Spray a 13x9x2- inch baking pan with non-stick spray and line with parchment paper so that the parchment sticks out further than the pan; set aside.

In a medium microwave safe bowl heat brown sugar and butter until butter melts and mixture is smooth, about 1-2 minutes. Cool slightly. Stir in eggs, one at a time. Add vanilla. Stir in flour, baking powder, and baking soda.

Spread batter in prepared baking pan. Sprinkle with almonds. Bake 25 to 30 minutes or until a wooden toothpick inserted near center comes out clean. Cool completely on a wire rack. Lift the bars out of the pan using the parchment paper to lift them out. Cut bars to desired size. Enjoy!
