Cajun Rice with Sausage


1 1/2 cups cooked brown or long grain white rice
Cooking spray
1 pound skinless, boneless chicken breasts
1 teaspoons paprika
¼ teaspoon salt
¼ teaspoon black pepper
1 teaspoon vegetable oil
¾ cup small onion, chopped
¾ cup small green bell pepper, chopped
2 garlic cloves, chopped
2 cups fresh sliced okra
1 cup reduced sodium chicken broth
1/2 pound smoked turkey sausage, sliced
1 cup tomatoes, chopped
2 green onions, sliced (green part only)


Combine paprika, salt, black pepper in a small bowl. Cut chicken into 1-inch pieces, and toss with 1 teaspoon of seasoning. Cook chicken in a large skillet coated with cooking spray and teaspoon of oil over medium heat 3 minutes.

Add onion, bell pepper, and garlic, and cook 3 minutes; add okra and cook for 2 more minutes. Stir in chicken broth, sausage and remaining 1/2 teaspoon seasoning. Bring to a boil. Reduce heat and simmer for about 10 minutes. Add rice and tomatoes. Sprinkle with sliced green onions, and serve immediately.

Yield: 6 servings
