Chinese Noodle Soup


(Serves 4) Soup Ingredients:

1 quart chicken stock, recipe divided

1 tablespoon soy sauce

½ cup Napa cabbage, shredded

½ cup mushrooms, sliced thin

¼ cup green onions, julienned

¼ cup cilantro, chopped

½ teaspoon chili sauce

Hand made noodles

1 ounce sesame oil

Noodle Ingredients:
Hand Made Noodles
Serves 4

2 cups all-purpose flour
½ cup warm water
1 teaspoon iodized salt
1 teaspoon sesame oil


Soup Method

Preheat a wok on high. Add 4 ounces of chicken stock and bring to a boil. quickly add soy, cabbage, mushrooms, and green onions and allow to steam for 30 seconds. Add remaining chicken stock, cilantro, and chili sauce. Allow soup to come to a boil and reduce heat to allow soup to simmer.

Prepare the hand made noodles, add immediately to soup and cook 20-30 seconds. Garnish with sesame oil and serve.

Noodle Method:

Place all ingredients into food processer and blend. Knead for 10 minutes by hand, cover in plastic wrap and refrigerate for 30 minutes. Divide dough into smaller pieces and roll out in pasta machine; cut into spaghetti size. Drop in soup and cook in broth for 30 seconds for a chewy noodle.
