Crunchy Cinnamon Oat Belgian Waffles
1 cup boiling water
¾ cup regular or quick rolled oats
1 ¼ cups all-purpose white flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
3 tablespoon vegetable oil
2 tables spoon cinnamon sugar
1 egg white
1 ¼ cups nonfat buttermilk
1. In a medium bowl, pour the boiling water over oats. Stir to combine and set aside for 3 minutes.
2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
3. Whisk the oil and sugar into the oat mixture. Add the egg and egg white and whisk until blended. Whisk in the buttermilk. Add the oat mixture to the flour mixture and stir just until blended.
4. For 8-inch waffles, ladle about 1 cup of batter into the waffle iron. Bake according to the machine's instructions.
