2 filets of fish (redfish, snapper, mahi, etc.)...or 1 lb of medium peeled and de-veined shrimp (25-30 count)
Butter or extra virgin olive oil
Tortilla shells ( 8-10 inch work great)
Heat oven or grill to 300 degrees. Take the filets and lightly rub them with either the butter or olive oil, then place in aluminum foil. Season them with whatever seasoning you desire. Remember, less is sometimes better. Thinly slice the lemon and place on top of filets. close the aluminum foil and place in the oven. Cook until filets become flaky when touched. Remember, fish cooks fast, so keep an eye on it! If using shrimp, cook until lightly pink. Don't cook too long!
Place cooked fish in taco shells and add the lettuce, tomato, onion and shredded cheese.
