Garlic-Pepper Marinated Hanger Steak with Scallion Flat Bread and Soba Noodle Salad

Ingredients

Ingredients for Steak
(Serves 6-8)

1/3 cup mushroom soy sauce

1/3 cup sugar

2 tablespoons rice wine vinegar

10 garlic cloves, minced

2 teaspoons cracked black pepper

2 teaspoons olive oil

2 teaspoons sesame oil

2 ½ pounds hanger steak

Kosher salt

Ingredients for
Scallion Flat Bread
(Makes 12)

3 cups all-purpose flour

2 teaspoons kosher salt

2 teaspoons baking powder

6 whole scallions

1 cup warm water

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 tablespoon flat leaf parsley

Olive oil

Ingredients for Vegetable Soba Noodle Salad

(Makes 6)

6 ounces soba noodles

¼ cup low-sodium soy sauce

1 tablespoon dark soy sauce

1 teaspoon sesame oil

3 tablespoons rice vinegar

2 tablespoons sweet chili sauce

2 garlic cloves, chopped

2 tablespoons mint, chopped

2 cups shredded carrots

Kosher salt

Cracked black pepper

Pickled ginger for garnish

Directions

Method for Steak

In a large bowl whisk together soy sauce, sugar and rice wine vinegar until the sugar has dissolved. Stir in garlic, black pepper, olive oil and sesame oil. Place marinade and steak into a zip-top bag; squeezing out the air, making sure marinade is coating the meat. Marinate steak in the refrigerator for 4 hours.
Heat grill on medium-high heat, pat off excess marinade and place meat on grill. Turn steak frequently to prevent burning until cooked. Grill steaks to 145 degrees for medium-rare or until desired temperature. Rest for a few minutes then slice and serve on scallion bread.


Method for scallion bread

Mix flour, salt and baking powder in a large bowl. Add the scallions and mix well to blend. Make a well in the center of the scallion flour mixture; add water, vegetable oil and sesame oil. Combine until dough is achieved.
Divide dough into 12 equal pieces. Form each piece into a ball, then flatten and roll out into 8-inch disk.
Heat a large skillet on medium heat. Brush lightly with olive oil and cook disks until golden brown, 1-2 minutes on each side when bubbles form it is time to turn over.




Method for Soba Noodle Salad

Fill a 3 quart pot with water and bring to a boil. Add soba noodles and cook until tender, yet firm, 2-3 minutes. Drain and rinse under cold water.

Whisk together all ingredients, except noodles and carrots.

Add noodles and carrots, season to taste and top with pickled ginger.
