Gluten Free Italian Sausage Soup


1 - 2 lbs Ground Italian sausage

1-2 chopped chicken breasts

2 tablespoons olive oil

1 medium diced onion

3 stalks of chopped celery

8 oz package of chopped mushrooms

3 cloves of chopped garlic

1 chopped red pepper

3 cups cubed zucchini

3 cups cubed yellow squash

2 cups diced carrots

2 cups chopped fresh spinach

1 can cannellini beans

1 can or package of frozen Italian green beans

2 cans diced tomatoes

2 tablespoons chopped fresh basil

2 teaspoons garlic powder

2 Tablespoons Italian seasoning

2 cans gluten free chicken broth (can be plain or Tuscany)


Brown sausage, drain in a colander, and set aside. Sauté chopped chicken in 1 tablespoon of oil until pink disappears and set aside. In a large pot sauté the next 5 ingredients in 2 tablespoons olive oil for 2 minutes; add zucchini and yellow squash and sauté for an additional 2 minutes. Add the meat and remaining ingredients. Add salt and pepper to taste. Bring to a low boil then simmer for 45 minutes, stirring occasionally. Top with parmesan cheese.
