Grilled Baja Fish Tacos


Serves 4-6


1½ pounds mahi mahi

2 tablespoons canola oil

2 limes, zested & juiced

1½ tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon dried oregano

1 tablespoon garlic, minced

Kosher salt and ground black pepper

8-12 (6-inch) corn or flour tortillas


1 cup cilantro, chopped

2 limes, wedged

½ cup Mexican crème

1 cup pico de gallo

¼ cup olive oil



Preheat grill on high.

Slice fish into 8-12 equal pieces. Combine next 8 ingredients in a mixing bowl, add sliced fish. Marinate for 30-45 minutes.

Grill marinated fish 2-3 minutes per side. Remove and hold for 5 minutes.

Place two pieces of grilled fish on a tortilla and garnish with favorite toppings.
