Italian Penne Chicken & Broccoli


A heart healthy dish that we enjoy at the firehouse
Serves at least 8 or more
9 Chicken Breasts
2 lbs. of wheat, penne pasta
2 lbs. of broccoli florets (frozen or fresh)
2 tbsp. of garlic salt
¼ cup of olive oil (add more to fit taste)


Sauté’ chicken breast in olive oil until completely cooked. The chicken will taste even
better if marinated ahead of time in some lite Italian dressing. Start boiling your water at
this time and begin cooking your 2 lbs. of penne pasta. As both chicken and pasta are
being cooked, start steaming your broccoli until you reach a cooked but not too soft
texture. Once all items are cooked, strain the pasta and cut/ slice chicken breast and mix
together in a large serving bowl. Add the broccoli and place the garlic salt seasoning
with the olive oil and mix thoroughly. Add additional olive oil and garlic salt to your liking. Another nice and tasty addition is to add grated Parmesan cheese to the top of the dish for a nice presentation and an Italian touch to this dish. This meal can be fitted to serve a smaller family of 4 by using half of the above ingredients.
This dish is healthy, lite and will satisfy even the heartiest appetites. Hope you enjoy this simple and delicious meal.
