Oatmeal Cake



1c quick-cooking or regular oats

1 ¼ c boiling water

½ c butter (1stick)

1c sugar

1c packed light brown sugar

2 eggs

1 tsp. pure vanilla extract

1 ½ c all-purpose flour

1 tsp. baking soda

½ tsp. salt

1 tsp. cinnamon


¼ c butter, softened

¼ c heavy cream

1c packed light brown sugar

1c shredded, sweetened coconut


Preheat oven to 350 degrees. Spray a 9x13 cake pan with non-stick spray and set aside. In a medium bowl, combine the oats with the boiling water and let stand for 5-10 minutes (10 for regular oats). In a mixing bowl, cream together the butter and sugars until fluffy. Add the oats and mix. Add the eggs and vanilla and mix well. In a separate bowl, sift together the flour, baking soda, salt and cinnamon. Gradually add to the oat mixture and mix well. Pour batter into the pan. Bake for 30-35 minutes, until brown and or a toothpick inserted into cake comes out with wet crumb. Remove from the oven and make the topping.

For the topping place all ingredients in a small sauce pan over medium heat. Bring to a boil and simmer for 2-4 minutes until all the sugar is dissolved and the mixture is bubbly and thick. Pour over the warm cake and spread evenly with a metal spatula until the top is completely covered; let cool completely. Cut cake into desired slices, Enjoy!
