VEGETABLE SPREAD

Ingredients


8-ounce package softened cream cheese
3" section cucumber, peeled
1/2 carrot, peeled
1/3 celery rib
1/6 large red or green bell pepper
3-4 sprigs fresh dill
2 green onions
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon garlic salt

Directions

Finely chop the cucumber, celery, pepper, dill, and green onions. Finely grate the carrot. Remove the moisture from the vegetables (especially the cucumber, carrot, and pepper) by blotting and pressing them in folded paper towels. Mix all ingredients well. Spread on shape crackers, i.e. Saltine squares, Club rectangles, Town House ovals, Ritz circles, Triscuit triangles. Also excellent served on bagels.
