World's Best Fried Oysters


1 pint fresh, raw Apalachicola oysters
1 cup half-n-half
1/2 Cup cornmeal
1 Cup all purpose flour
3 tablespoons Cajun Seasoning
Peanut Oil


Fill a medium saucepan 1/3 full of peanut oil and heat to 350 degrees
Mix cornmeal, flour and Cajun seasoning in a shallow pan
Dip raw oysters in half-n-half
Roll in cornmeal mixture
Carefully place coated oysters in the hot oil (just put a handful of oysters in at a time so oil stays hot)
Cook till oysters are golden brown and they float (about 1 minute)
Drain on paper towel
