Easter Basket Cupcakes, Savory Saturday With Liza Park
Be the hit of your Easter events when you show up with these adorable Easter Basket Cupcakes. They look colorful and fantastic and taste even better!

Ingredients:
Cake:
Lemon cake mix
Vanilla instant pudding mix
2 whole eggs
2 egg whites
1/2 cup milk
1/2 cup oil
1 teaspoon Lemon extract (optional)
Jumbo, metalic cupcake liners with

Buttercream icing:
1/2 stick butter (room temperature)
3 cups confectioner sugar
Lemon extract
green food coloring

Decorations:
Sweetened shredded coconut
green food coloring
jelly beans and/or robin eggs candies
twizzlers (whatever color you prefer)

Directions:
Combine the cake mix, pudding mix, whole eggs, egg whites, milk, oil, and lemon extract in a mixing bowl and mix with an electric mixer for about 2 to 3 minutes. Pour the cake mix into the jumbo cupcake liners about halfway full. (Get the jumbo cupcake liners because it gives you more space to put the decorations on, especially the twizzler basket handles.) Bake for about 20 to 35 minutes (depending on your oven) or until the cupcakes spring back when you press a finger on the top of the cupcakes. Let them cool completely before icing them.

For the icing, mix the sugar, butter and extract together until creamy and smooth. Then add in a few drops of the green food coloring and mix until color is even.

For the green grass in the baskets: put about a cup of the shredded coconut in a plastic bag and drop about 3 or 4 drops of green food coloring on the coconut in the bag and shake and mix around until the coconut is all green.

Then just ice the cupcakes as usual with about a tablespoon or two of icing. Then immediately put some of the green coconut on top of the icing. Place a few jelly beans or robin egg candies on the coconut for "eggs." Push one end of a twizzler into the edge of the cupcake then push the other end into the cupcake on the opposite side to make the "handle" for the basket. You're done! Enjoy!!
