Garlic Miso Braised Pot Roast
Ingredients:
- 3 and a half pounds - Beef Chuck Roast
- Half a teaspoon - Sea Salt, Fine
- Half a teaspoon - Black Pepper, Ground
- 2 Tbsp - All Purpose Flour
- 2 Tbsp - Butter, Unsalted (Divided)
- 1 - Yellow Onion, Large, Sweet
- 3 Tbsp - White Miso
- 1 Tbsp - Rice Vinegar
- 2 Tbsp - Honey, Pure
- Quarter Cup - Minced Garlic
- 2 and a half cups - Beef Bone Broth (Divided)
- 3-4 sprigs - Rosemary, Fresh
- 16-24 oz - Golden or Red Bite-size Potatoes, Halved
- 3 - Carrots, Sliced
Instructions:
- Preheat oven to 325 degrees Faranheit. Rub the roast to coat with a mixture of salt, pepper, and flour. In a large Dutch oven or oven-safe braiser, on high heat, add 1 Tbsp of butter and sear the seasoned roast for 2-4 minutes on each side. Remove from the braiser and set aside.
- Reduce the heat to medium-high, add the remaining butter, and saute the onion, potatoes, and carrots for 2-3 minutes. Remove from the braiser and set aside.
- Whisk together the miso, honey, vinegar, minced garlic, and 1 cup of broth. Use the mixture to deglaze the braiser, whisking and bring to a light simmer, then add the chuck roast back to the braiser, cook another 1-2 minutes, then flip. Turn off the heat, then spoon as much of the sauce in the braiser as possible back over the roast.
- Add the potatoes and sliced carrots back to the braiser, placing them around the roast. Top with rosemary sprigs, add the lid/cover, and cook in the preheated 325 degrees Faranheit oven approximately 4 hours.
- Turn the heat up to 400 degrees Faranheit. Remove lid/cover, spoon sauce back over the oast to coat well, and return to the oven uncovered 15-20 minutes (or until crispy brown edges form).
- Remove from oven. Rest roast approximately 5 minutes. Serve and enjoy.
