Good Morning Eats: Cranberry Brie Bites with Bourbon Maple Cranberry Sauce

Rebecca Weaver, with Fresh Little Garden, stops by the studio to show us how to make a non-traditional Thanksgiving side dish.


8 oz pkg. fresh Cranberries

1/2 cup chopped Dark Sweet Cherries

2/3 cup pure Maple Syrup

1.5 oz. spiced Bourbon

Zest of 1 Lemon

Juice of 1/2 a lemon

1/3 cup water

1 cinnamon stick

1/4 tsp ground ginger

1 pkg. Crescent rolls

Brie cheese slices

Gouda slices

Chopped pecans (optional)

Fresh Rosemary sprigs (optional)


Combine water, syrup, lemon zest, ginger and lemon juice in a pan. Add the cranberries and cinnamon stick and heat over medium heat, stirring occasionally. Once sauce thickens, add chopped cherries and bourbon. Let sauce simmer on low for about 15 more minutes stirring occasionally. Remove from heat

Brie Bites:

1) Preheat oven to 350°

2) Spray mini muffin tin with nonstick spray

3) Roll out Crescent roll dough lengthwise onto a piece of parchment

and pinch together any loose perforations. Cut dough into strips from top to bottom cut each of those strips in half so you are left with 2 squares per strip.

4) Place a square in each of the prepared muffin tin cup slots

5) Cut brie or gouda cheese into small, penny size pieces and place in the center of Crescent square in muffin tin

6) Add about a 1/2 teaspoon of cranberry sauce on top of cheese

7) Bake in 350° oven for about 10-12 min. Just before you remove bites, sprinkle with chopped pecans and add a small sprig of rosemary; return to oven

8) Bake just until golden brown

9) Serve warm and enjoy!
