Almond Cinnamon Cookie Bites


· 1 1/3 cup almond flour (Super Fine Blanched)
· ¼ cup brown sugar (or may sub for Stevia)
· 2 tablespoons vegetable oil
· 1 egg
· 1 tablespoon cinnamon
· 1 teaspoon vanilla extract
· Dash of salt
· ½ teaspoon baking powder
· ¼ cup butter

· 4 oz cream cheese softened
· 2 tablespoons heavy whipping cream or almond milk
· 3 tablespoons no calorie sweetener
· 1 tablespoon vanilla extract
· Chopped fruit, nuts or ¼ teaspoon cinnamon (optional)


· Preheat oven to 350 degrees
· Line pan with parchment paper or grease (set aside)
· Combine all ingredients in bowl and mix well
· Let dough sit for a few minutes, then using your hands form into a ball or flatten. These don’t spread as wheat based cookies so it is best to flatten to the desired size before baking.

Combine all ingredients in bowl and mix with hand mixer.
