Apple Rum Raisin Cobbler


Apple Mix
4 Large Apples, peeled, sliced
2 Tablespoons of sugar
1 teaspoon of cinnamon

2 Cups- Flour
1 Cups - Sugar
1 Cups - milk
1 egg
1 tablespoon of baking powder
1 table spoons of cinnamon
1/2 Cup Raisins
2 tablespoons of Vanilla
3 tablespoons of Bacardi rum

3/4 stick of butter softened

Rum Glaze
1/8 cup of rum
1/8 cup of water
3 tablespoons of butter
1 cup powdered sugar
1/2 teaspoon of cinnamon

1/2 cup crushed pecans for garnish (optional)


Step 1
Preheat oven to 350 degrees

Step 2
Grease pan using cooking spray or butter and flour

Step 3
In a bowl sprinkle sliced apples with 2 tablespoons of sugar and one teaspoon of cinnamon

Step 4
Combine flour, sugar, baking powder, cinnamon...then add egg, milk, raisins, mix well

Step 5
Spread apple mix into greased pan

Step 6
Pour flour mixture over apples

Step 7
Spoon small pieces of butter over batter mixture

Bake for 45 min to an hour or until bread mixture is golden and dry with toothpick test.

Once cobbler is just about done, prepare the rum glaze by placing all the ingredients in a pot and bringing to a medium boil.

Immediately pour the warm glaze over the cobbler once it is out of the oven

***Serve warm with vanilla ice cream for added experience
