This dish is a staple in the traditional Bahamian Dinner. Here in the South a southern dinner isn't complete without Cornbread, for Bahamians its Corn Pudding that completes each Sunday and holiday meal.

Use this as an appetizer or as the perfect addition to your Thanksgiving meal.

Here's what you'll need:

1 1/2 Cups Sugar
1/4 Cup Butter
2 tablespoons Vanilla
2 eggs
2 1/2 Cups Flour
2 teaspoons Cinnamon (optional)
- a dash of salt
1 ripe Banana
2 -12oz cans of cream styled corn
1 -12oz can of corn (strained)
1 -12oz can evaporated milk (separated into half)


Here's how .....

Step 1. Preheat oven to 350 degrees and grease and flour pan

Step 2. In a mixer, combine sugar, butter, vanilla flavoring - beat until softened and combined

Step 3. Add Eggs one at a time - Beat until creamy

Step 4. Add softened Banana and mix well (you want the banana to be completely mixed into batter)

Step 5. Add flour, salt and cinnamon - mix

Step 6. Pour in 1/2 can Evaporated milk (approx 6 oz)

Once mixed, pour batter into pan. Pour remaining cream over mixture. This allows it to come to a golden brown finish)

Bake until golden brown - Be patient... this may take a while to bake.

Serve Hot
