Bacon Beer Upside-Down Cake


o 1 Cup of butter + 2 tablespoons melted
o 4 eggs
o 2 cups Granulated Sugar
o 2 Teaspoon Vanilla Extract
o 3 cups flour
o 1 Tablespoon baking powder
o Pinch of salt
o ¾ Cup of Milk
o 1/2 Cup of beer ( I used Bud Light Lime) –
o ¼ Cup Beer
o 1/2 Cup Brown sugar
o 6 – 7 strips of bacon
o 1 cup Maraschino Cherries without stem or seeds


• Step 1 – Preheat Oven to 350 degrees and grease sides of 8” Square pan
• Step 2 – Mix Cake
o Beat together butter and sugar, add vanilla
o Once whipped together to create a smooth texture add eggs
o In separate bowl add salt, baking powder and flower – Mix then combine to egg mixture – Mix until well combined
o Add milk and ¼ cup of beer – whip until smooth – (approx. 5 minutes)
• Step 3 – pour melted butter in bottom of square 8” pan and spread evenly
• Step 4 – Press Brown sugar into bottom of pan and pour ¼ cup of beer over the sugar
• Step 5 – Line Cherries and Bacon strips on top of brown sugar - The bacon will move so its best to overlap a bit to ensure full coverage
• Step 6 – Pour in batter and fill pan 2/3 to ¾ full and bake for 30 minutes or until inserted toothpick comes out clean in center.
• Once baked let sit for approximately 5 minutes and while the cake is still warm, place a large plate on top and flip. It is important to do this while the cake is still hot so the caramel doesn’t harden at the bottom of the pan.
