Bahamian Corn Pudding


1 1/2 Cup Sugar
1/4 Cup Butter
2 table spoons Vanilla
2 eggs
2 1/2 Cup Flour
2 teaspoon Cinnamon (optional)
- a dash of salt
1 ripe Banana
2 -12oz can of cream styled corn
1 -12oz can of corn (strained)
1 -12oz can evaporated milk (separated into half)


Step 1. Preheat oven to 350 degrees and Grease and flour pan

Step 2. In a mixer, combine sugar, butter, vanilla flavoring - beat until softened and combined

Step 3. Add Eggs one at a time - Beat until creamy

Step 4. Add softened Bananas and mix well (you want the bananas to be completely mixed into batter

Step 5. Add flour, salt and cinnamon - mix

Step 6. Pour in 1/2 can Evaporated milk (approx 6 oz)

Once mixed pour batter into pan. Pour remaining cream over mixture. This allows it to come to a golden brown finish)

Bake until golden brown - Be patient this may take a while to bake.
