Balsamic Mixed Greens with Shrimp and Avocado


8 cups mixed greens
1 ½ pounds shrimp, cooked
3 pears, sliced
1 cup grape tomatoes, halved
1 cup avocado, cubed
½ cup Craisins
1 ounce blue cheese, crumbled
3 slices center cut bacon, cooked and crumbled
3 tablespoons glazed pecans
¾ cup croutons

2 tablespoons rice wine vinegar
1 tablespoon canola oil
3 tablespoons orange juice
2 tablespoons balsamic vinegar
1 tablespoon sugar


Whisk together rice wine vinegar and next 4 ingredients in a measuring cup. Serve immediately or refrigerate.

Combine mixed greens and next 8 ingredients in a large salad bowl. Toss with dressing and add croutons.
