Caprese Flatbread with Balsamic Glaze


½ cup balsamic vinegar
8 ounce flatbread or pizza crust
1/2 cup part skim ricotta cheese
1 teaspoon minced garlic (approximately 1 garlic clove)
3 tablespoons basil, roughly chopped
1/2 cup fresh Parmesan cheese, grated, divided
3 to 4 tomatoes, sliced
3 ounce fresh mozzarella cheese, cubed
Basil for garnish


Add the balsamic vinegar to a small saucepan and simmer on low heat until reduced by half. It will become thicker, sweeter and more syrupy as it cooks.

Preheat oven to 400 degrees.

Combine the ricotta cheese and garlic. Spread the cheese mixture over the flatbread.

Top with basil, 1/4 cup of Parmesan cheese, tomatoes, mozzarella and remaining 1/4 cup of Parmesan cheese.

Bake flatbread for about 10 minutes, or until cheese is melted.

Top with basil and drizzle with balsamic reduction.
