1 15 oz can sweet potatoes, drained and mashed
1 8 oz can crushed pineapple, drained
3 tbsp butter
2 tbsp brown sugar
¼ tsp salt
1 egg, beaten
½ tsp cinnamon
4 oz of caramel topping
2 cups of mini- marshmallows (divided in half)
Preheat oven to 350 º
Mix sweet potatoes, pineapple, butter, brown sugar, cinnamon, salt and egg in a bowl.
Pour half into a 9x9 casserole.
Pour caramel sauce over top of potatoes, top with 1 cup of the mini marshmallows
Spread the rest of the potato mix over the marshmallows
Bake for 30 minutes, then top with remaining cup of marshmallows, bake an additional 10 minutes until golden brown
