Chocolate Pots De Crème


• 1 pt. Milk
• 8 oz. Bittersweet Chocolate
• 7 oz. Granulated Sugar
• 1 tsp. Vanilla Extract
• 7 Egg Yolks
• Garnishes


• Heat milk to just a simmer.
• Add chocolate and sugar.
• Stir continuously until chocolate is fully melted.
• Whisk egg yolks for 2 to 3 minutes.
• Add vanilla extract to the egg yolks.
• Temper egg yolks with hot chocolate mix.
• Once egg yolks reach the desired temperature, add egg mixture back to chocolate mixture.
• In ceramic ramekins, fill with the mixture to the desired height.
• Place ramekins in a water bath.
• Pre-heat oven to 325 degrees.
• Bake for 30 mins, or until just about set.
• Remove from the water bath.
• Allow to cool down, and chill for 2-8 hrs.
• Add favorite garnishing: crushed graham crackers, m&m’s, crushed candy cane, whip topping or fresh fruit.
