Citrus Macerated Fresh Berries and Whipped Cream Trifle


(Serves 4)

1 pint strawberries, quartered
1 pint blueberries
1 pint blackberries, halved
1 pint raspberries
1/4 bunch mint, chopped fine
2 oranges, zest, juiced
1 lime, zest, juiced
1 lemon, zest, juiced
2 tablespoons turbinado sugar
1 pint heavy whipping cream
1 tablespoon sugar
4 mint tops for garnish


Combine berries with mint in a non-reactive bowl; add citrus juice and turbinado sugar. Allow berries to chill in refrigerator for 1–2 hours.

Combine heavy cream, citrus zests, and sugar in mixing bowl; mix on medium speed until thick peaks form and hold. Layer plastic champagne glasses, with one layer of whipped cream, followed by a layer of berries repeat process until glass is filled. Sprinkle turbinado sugar on top and garnish with mint tops.
