Coffee Sugar Cookies
1 c butter, softened
1 ¼ c granulated sugar
1 large egg
2 tsp. vanilla extract
2 Tbsp. instant coffee granules
1 tsp. baking soda
½ tsp. salt
2 c all-purpose flour

Coffee Frosting
½ c butter, softened
2 c powdered sugar, sifted
2 tsp. milk
1 tsp. instant coffee granules


Coffee Sugar Cookies
Preheat oven to 350 degrees.

In the bowl of a stand mixer with a paddle attachment, cream together the butter and the sugar. Once the mixture is light and fluffy, beat in egg, instant coffee and vanilla until well combined. Add baking soda and salt and carefully add the flour until it’s just combined.

Remove dough from bowl and cover with plastic wrap and refrigerate dough until firm. Form 36 balls (about a heaping tablespoon in size) and place them 2-3 inches apart on a lined baking sheet.

Bake for 12-14 minutes or until the outsides are nice and brown. Allow cookies to cool slightly on baking sheet before transferring them to a wire rack to cool completely.

Coffee Frosting
In a large bowl, cream butter until light and fluffy. In a separate bowl, dissolve the instant coffee in the milk. Slowly beat in the powdered sugar and milk-coffee mixture. Mix until the frosting is light and fluffy (3-5 minutes).

Frost the cookies once they are completely cooled.
