Confetti Peanut Butter Fudge


1 16oz jar of smooth peanut butter
2 sticks or (1 cup) of butter (plus extra to grease pan)
2 tablespoons of vanilla extract
2 lbs Confectioners (Powdered Sugar)
½ Cup of colored sugar crystals (be sure it is coarse and not very fine since you want it to be seen through the fudge) - for the New Year edition I prefer gold, silver and little black/ gray


Step 1. - In a microwaveable bowl, combine peanut butter and butter - microwave for 2 minutes or until melted

Step 2 - Once melted, stir to combine the ingredients… add Vanilla extract

Step 3 - Pour in approximately ¾ of the sugar crystals into the mix and stir (the other portion will be used to spread on top)

Step 4 - Add powdered sugar a bit at a time, mixing thoroughly - once all the sugar is added.. you will notice the mixture begins to thicken (like a dough) continue to mix until all the sugar is mixed in

Step 5 - Spread mixture into greased pan (approximately 9 x11” or ¼ sheet) to smooth top - place parchment paper over the pan and smooth with hands - ADD SPRINKLES

Refrigerate for 2 hours until set - remove and cut into 1 inch bars to serve - makes approx 30 1” bars
