Corn Salad


32 ounces frozen corn, defrosted and uncooked
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 sweet onion, chopped
2 jalapeno peppers (No seeds or pulp unless you like it hot)
4 cups shredded sharp cheddar cheese
1 cup mayonnaise
1 cup sour cream
1 tbs lemon juice
1 bag Chili Fritos, slightly crushed


Defrost corn and drain if needed. Put in a large bowl, it makes a lot!

Chop veggies and add to bowl.

Mix mayo, sour cream, lemon juice and seasoning and stir into ingredients in bowl.

Stir in cheese.

Add crushed chips just before serving if you want them crispy. Otherwise, you can add then when making salad

NOTE: Extra spices I added to taste were chili powder, garlic powder and onion powder. If jalapeno peppers are too spicy for you, Poblano peppers can be substituted.
