Corona BBQ Pork Loin with Jasmine Rice


• 2 tbsp butter
• 1 Sweet Onion, sliced thin
• 2 Garlic Cloves, minced
• 1 tsp Cumin
• 1/2 tsp Cinnamon
• 1/4 tsp Chinese Five Spice
• 1 12oz can Corona
• 1/2 cup Dijon Mustard
• 1/4 cup Honey
• 1 cup BBQ Sauce
• 3 lbs Pork Loin, cut to desired thickness, floured.


• In a medium saucepan, melt butter. Caramelize onions. Add garlic and continue to stir. Add all seasonings. Add beer, honey, mustard, and BBQ sauce, allow to simmer for 5 minutes. Remove from heat, and purée in batches. When sauce is done, add back to pot and slowly simmer.
• In a medium sauté pan, on medium/ high heat, add oil. When oil starts to smoke, add pork pieces sear all sides. Add to BBQ sauce and simmer for 20 minutes.
• Serve with Jazmine rice or your favorite starch.
