Creamy Strawberry Bars


1 ¼ c all-purpose flour
1c regular or quick-cooking oats, uncooked
2/3 c sugar
1 tsp. baking powder
½ c (1 stick) butter, melted
1 (8oz.) package cream cheese, softened
½ c sugar
2 egg
1 tsp. pure vanilla
2/3 c strawberry preserves



Preheat oven to 375 degrees. Combine flour, oatmeal, sugar, baking powder and butter. Press mixture into ungreased 13x9-inch baking pan. Bake 15 minutes and let cool.


Beat cream cheese, sugar, eggs, and vanilla in the bowl of an electric mixer with a paddle attachment until creamy. Gently spread the preserves over the hot crust. Pour cream cheese mixture over the strawberry preserves. Bake 18-20 minutes or until cream cheese is set and edges are golden. Cool completely and cut into bars. Enjoy
