Curried Chicken Salad


3 cups chopped cooked chicken breast (about 16 ounces)
1 cup halved seedless red grapes
1 cup diced apple
1/4 cup diced onion
¼ cup diced celery
2 tablespoon Craisins, raisins or dried cherries
3 tablespoons low-fat mayonnaise
3 tablespoons plain Greek yogurt
2 teaspoon sugar
1/2 teaspoon curry powder
2 teaspoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup pecan pieces, toasted


Combine first 6 ingredients in a large bowl. Combine mayonnaise and next 6 ingredients (through pepper), stirring with a whisk. Pour mayonnaise mixture over chicken mixture; toss gently to coat. Sprinkle with pecans. Cover and chill or serve immediately on pita bread or on lettuce.

Yield: 4 servings About 300 calories, 7 grams fat
