Double Chocolate Lamington Muffins



Ingredients

Cake
• 1 cup Butter, softened
• 1 cup Granulated Sugar
• 2 Eggs
• 1 3/4 cup Cake Flour
• 1 tsp Baking Soda
• 1/2 cup Cocoa Powder
• 2/3 cups Butter Milk

Chocolate Topping
• 1 cup Powdered Sugar
• 1/2 cup Cocoa Powder
• 1/3 cup Butter, melted
• 1/3 cup Water, boiling
• 1 tsp Vanilla Extract
• 2 1/2 cups Sweetened Flaked Coconut

Directions

Cake
• Cream butter and sugar until fluffy
• Whip in eggs, one at a time
• Add vanilla
• In separate mixing bowl, sift flour, baking soda and salt. Sift in cocoa powder
• Add flour mix and buttermilk to creamed sugar mix
• Mix until just combined
• Spoon into greased muffin pans
• Bake 30 minutes at 350 degrees or until muffins are done

Chocolate Topping
• Combine powered sugar, cocoa powder and butter
• Add boiling water and vanilla
• Whisk until smooth

Allow muffins to completely cool on a wire rack with catch pan. Pour chocolate on top of muffins, and top with your favorite topping eg: Salted peanuts, M&M’s, coconut. Refrigerate until set. Enjoy!
