2 1/2 cup all purpose flour
1 1/2 cup granulated sugar
1/2 cup light brown sugar
2/3 cup 100% powdered cocoa
2 teaspoons baking soda
1 teaspoon salt
1 cup warm water
1 cup room temperature non-dairy milk
1/2 cup vegetable or canola oil
2 teaspoons vanilla extract
2 teaspoons vinegar
DirectionsPre-heat oven to 325 degrees Fahrenheit. Grease two 8-inch round pans with oil and coat with all purpose flour. Cut two parchment paper rounds and place inside the two pans and set pans aside.
Combine dry ingredients in a sifter over a medium-sized bowl and sift and dump away any excess lumps. Pour in each wet ingredient one at a time. Mix all ingredients with a whisk very well. Pour batter into prepared pans.
Bake at 325F for 40 minutes or until a toothpick inserted comes out crumbly, but not wet. When baked, let rest until cake comes to room temperature.
