Firehouse Friday: Chicken Parmesan


-Boneless skinless chicken breast or breast fillets
-Italian bread crumbs
-Parmesan Cheese (or any Italian blend, finely grated)
-Two jars of red sauce
-One box of preferred pasta
-Olive Oil
-Ground garlic


-Filet chicken breasts to approximately 3/4” thick.
-Place chicken in egg wash (optional).
-Sprinkle on salt, pepper, and garlic powder.
-Evenly cover/bread in Italian bread crumbs.
-Heat (1/2”) olive oil in large frying pan over medium heat and add chicken breasts.
-Cook until golden brown and done in the middle. Flip once during cooking.
-Pour red sauce into baking pan.
-Preheat oven to 350*, and boil 4 quarts of water in pot.
-Place fried chicken breasts on top of red sauce, sprinkle on Parmesan cheese, and place in preheated oven.
-Bake at 350 degrees for 7-9 minutes.
-Place pasta in boiling water and stir occasionally, boil for 7-9 mins or until done.
-Plate up noodles and serve chicken and sauce on top. Serves 4-6.
