Firehouse Tex-Mex Bake


8-Fajita size flour tortillas-5 of them cut in half
1 can refried beans
1 can sweet corn-drained
1 can black beans- drained AND rinsed
3 cups cut-up, cooked chicken
2 cups any style picante or salsa
3-4 cups shredded ‘fiesta’ cheese


Spray a 9x13 baking dish- Pre-heat oven to 350º

Place the halved tortillas around the edge of the baking dish forming a scalloped edge and cover the bottom of the casserole with the uncut tortillas-single layer

Spread refried beans over bottom layer of tortillas

In a large bowl mix together: chicken, corn, black beans, salsa and HALF the shredded cheese (also mix in any additional options you have chosen)

Fill casserole with chicken mixture

Cover with remaining cheese and bake for 30 minutes

Serve with shredded lettuce, sour cream, extra salsa and diced jalapenos
